By now, I’m sure you know just how much I love an easy recipe. This creamy, colorful soup is SO easy to throw together on those nights when you don’t feel like cooking, and it doesn’t require a crazy amount of ingredients. To mix it up, add your favorite spices or herbs, or play around with different toppings (macadamia nuts!) to change the texture or add a crunch. This soup is also very rich in Folate.
Ingredients:
- 1 head broccoli
- 1 14 oz (400 ml) can coconut milk
- salt, pepper, nutmeg
- Topping Ideas:
- crushed macadamias
- parsley, chopped
- avocado
Preparation Instructions:
Add the coconut milk and the broccoli (broken into florets) to a sauce pan and bring to a boil. Let simmer for about 5 minutes until the broccoli softens. Remove from heat.
After letting it cool a bit, transfer to a blender and process until smooth. Transfer back to the saucepan. Reheat and season to taste with salt, pepper, and nutmeg. Serve with optional toppings
Can I use real milk and get the same results? I have never really liked fake milk.

You can use cow’s milk or goats milk, as long as it’s whole milk and not skim.
