We are finally seeing some Winter temperatures here in Southern California, and that always has me craving comfort food and a cozy night relaxing at home! This time of year, it’s tough to navigate “comfort” food with health, but it is possible. With recipes like this Roasted Tomato Soup, you can satisfy that craving without sacrificing healthy choices. Ingredients: For the apples: 5 granny smith apples, 1 tablespoon pure maple syrup, 3 tablespoons water, 2 teaspoons cinnamon
For the crumble topping: 1 cup old-fashioned oats, 1/2 cup almond flour, 1/2 cup chopped almonds, walnuts, or pecans, 3/4 teaspoon cinnamon, 1/4 teaspoon sea salt, 1/4 cup melted coconut oil, 1/4 cup pure maple syrup
This week is the beginning of the holiday rush – Thanksgiving, holiday parties, school parties, get-togethers, Christmas, New Years – the list goes on and on!
