This week is the beginning of the holiday rush – Thanksgiving, holiday parties, school parties, get-togethers, Christmas, New Years – the list goes on and on! And while it is certainly the most wonderful time of the year, it can be difficult to navigate your food choices when there are so many tempting options. But I’m here to tell you that the holidays don’t mean you have to fall off your healthy path – you CAN make good choices and enjoy the holidays at the same time! Check out my Thanksgiving tips below and the Holiday Survival Guide.
Like you, I am always looking for ways to save time in the kitchen! I love serving my family home cooked meals and I believe that the best memories are made around the table, but some weeks I just can’t find the time to do it all! This is why meal prep is so important, and this recipe is a great example of that. A simple chicken bowl that you can serve over brown rice or quinoa, that’s prepped and done in under an hour, and you have healthy meals all week!
I totally love the fruits and vegetables that are in season during summer, especially tomatoes! There are truly endless possibilities of dishes to make starring tomatoes, but I wanted to share this recipe with you this week because it’s so simple. The pesto is a wonderful addition to the bold acidity of the tomatoes – I hope you enjoy!
