This creamy, colorful soup is SO easy to throw together on those nights when you don’t feel like cooking, and it doesn’t require a crazy amount of ingredients. To mix it up, add your favorite spices or herbs, or play around with different toppings (macadamia nuts!) to change the texture or add a crunch. This soup is also very rich in Folate.
